refactor(profile-setup): simplify setup to focus on agent identity and user info

Remove work context and workflow preferences collection since this is a
general-purpose agent not tied to specific work types.

Setup now only collects:
- Agent identity (name, style) -> soul.md
- User info (name, timezone, preferences) -> user.md
