feat(scripts): isolate dev:local data and workspace directories

Browse source 
Sets SMC_DATA_DIR=~/.super-multica-dev and
MULTICA_WORKSPACE_DIR=~/Documents/Multica-dev for gateway and
desktop processes in dev:local, preventing dev/prod data mixing.
